Taco Lettuce Wraps

I love Mexican food. Like, love it in a serious way. If I had to choose which flavor of food to choose for the rest of my life, it very well may be Mexican. It’s easy, tasty and have I mentioned easy?


I whipped up these taco lettuce wraps in less than 15 minutes and had enough leftovers for another 2 lunches which is always a win for me. And now my garden has an abundance of green bell peppers so that was a perfect excuse to needing to make these stat.


These taste awesome because of the fresh ingredients and the ease of making your own taco seasoning to toss in there. If you aren’t playing the paleo or low-carb game then add some corn tortilla shells, chips and salsa and call it dinner.

Taco Lettuce Wraps


1 lb grass fed ground beef

1 head of iceberg lettuce (or green cabbage)

1 green bell pepper, diced

1 shallot, diced

1 jalepeno, diced

Guacamole and Salsa

Taco Seasoning:

1 Tbsp chili powder

1 Tbsp ground cumin

2 tsp paprika

2 tsp onion powder

2 tsp garlic powder

1 1/2 tsp oregano

Pinch of red pepper flakes


Brown your beef in a non-stick skillet. Add all your chopped veggies cook for 3-5 minutes and then add your taco seasoning.

Make sure taco seasoning is distributed and scoop into washed and dried lettuce leaves. Top with guacamole and salsa.
