Every other month for the past (almost) 2 years I’ve hosted a girls night at my house. It’s always a good time for girlies to come over and hang. No agenda. Just hanging out. Every one brings a sweet or savory dish and their favorite drink to share. We sit around, eat and have some crazy conversations that always bring with them side splitting laughter. I. Love. It.
This month I made these peanut butter chocolate chip pretzel bites. Delish.
A good combo of sweet and salty. Which let’s be honest, every girl likes a little sweet and salty in their life. It kills two birds with one stone. And who doesn’t love the looks of this raw butter, sugar, and peanut butter bowl? That’s what I thought… no one.
But then you add some crushed pretzels. (A good way to bang out some frustration, might I add)
And then chocolate and peanut butter chips on top of that? Well, we’ve got ourselves a mighty fine snickety snack.
I was so pressed for time while making these that I didn’t even taste the raw dough. Who am I?
I’m regretting that oversight this morning but am still pleased at how these turned out and I have about a dozen left in a container on my kitchen counter. Wonder how long those are going to last? Not long, people, not long.
Peanut Butter Chocolate Chip Pretzel Bites
adapted from How Sweet Eats
1 c plus 1 Tbsp all purpose flour
1 c plus 1 Tbsp whole wheat pastry flour
1 stick unsalted butter, melted and cooled
1/2 c peanut butter, melted and cooled
1/2 c dark brown sugar
1/2 c light brown sugar, loosely packed
1/2 c granulated sugar, loosely packed
1 egg plus 1 egg yolk
1/2 tsp baking soda
1/4 tsp sea salt
2 tsp vanilla extract
2 c crushed pretzels
1/2 c semi-sweet chocolate chips
1/2 c peanut butter chips
Directions:
Preheat oven to 350 degrees.
In a bowl, combine your flours, baking soda and salt. Set aside.
Combine cooled peanut butter, butter, and sugars into a bowl and mix until combined. Add egg, egg yolk, and vanilla extract. Start adding your flour gradually and mix until a dough forms. I had to use my hands at the last bit to incorporate it all. Fold in your pretzels and chocolate and peanut butter chips.
Form into 1 inch balls and place on cookie sheet. Bake for 7-9 minutes until golden brown. Place on cooling rack to cool completely.

I definitely like a little sweet and salty in my life! Plus the hubby is crazy about peanut butter, and especially peanut butter + chocolate. Seems like the pretzels would add their own nice crunch too!
